Ping Tung is a high-producing Taiwanese eggplant. It grows long slender eggplants that are great for stirfries and roasting. The fruits grow up to 11" in length, though you may want to harvest a little younger and smaller for more tenderness. Protect plants from flea beetles and potato beetles with floating row cover until they begin flowering.
