I have tried many different mushrooms and shiitake are always my favorite. They are reliably tasty and easy to prepare. If I'm feeling a little fancier I'll slice them extra thin, and very slowly cook them in a pan with butter, maple syrup and soy sauce to make what we call "shiitake bacon". Cook until they are crispy and brown and the mix of savory and sweet will win you over.
I always save the stems for adding into soup stock, adding them to a bag I store in the freezer with my stock ingredients (onions and onion skins, carrot trimmings, greens from root veggies, etc) until it's time to make a fresh batch.
